Ingredients

For taco shells

  • 2 cups cheddar cheese grated

For taco filling

  • 1 pound ground beef
  • 1 packet keto-friendly taco seasoning (like Foundation Pantry Metabolic Taco Seasoning)
  • ½ cup water
  • 1 cup lettuce shredded
  • ½ cup tomato chopped
  • ½ cup cheddar cheese grated
  • ½ cup sour cream

Instructions

Keto taco shells

  • Preheat oven to 350 degrees F / 177 degrees C. Prepare baking sheet with parchment paper or silicone mat.
  • Spread 2 cups cheddar cheese evenly on baking sheet, dividing into eight rounds, approximately three inches in diameter.

  • Bake cheese taco shells for 7 to 10 minutes until edges start to become golden brown.
  • Take out from oven and let cool for two minutes. Then, remove from baking sheet and carefully fold in half to create taco shells. For added stability, place shells in taco stands.

Keto taco filling

  • In a large skillet, brown ground beef. Then, add keto taco seasoning packet and water. Simmer for five minutes.
  • Assemble tacos with ground beef, cheddar cheese, chopped tomato, sour cream, and shredded lettuce.
    1 pound ground beef, 1 cup lettuce, ½ cup tomato, ½ cup cheddar cheese, ½ cup sour cream
  • Serve and enjoy!

Notes

  • Add spicy jalapeños or hot sauce for an extra kick of heat. 
  • Ground turkey, chicken, or pork are excellent taco meat options to replace ground beef. 
  • The taco shell can be made with other types of cheese, such as mozzarella or pepper jack, for a different flavor profile.  
  • If you prefer soft taco shells, reduce the cooking time and shape the melted cheese over a rolling pin or other cylindrical object.
